Recipe of perfect Dahi Bada UP style

This recipe is a native to my homeland Uttar Pradesh. My mother brought this recipe from her father's house to my father's. For the authentic Dahi Bada the curd is set in a flat earthen pot. The street shops of UP still have those earthen containers to store Dahi Bada.





Dahi Bada is a real pleasure in summers. It has enhanced taste & lasts fresh for long if you add the pudina herb to it. The Bada melts in mouth and the curd cools the throat. It is a perfect savory snack which is healthy and lightly spiced.

The UP Dahi Bada has roasted spices which makes it even more delicious. Here is a super quick and easy recipe to make soft melting Dahi Badas.




PREPARATION TIME : Overnight

COOKING TIME : 15 min

TOTAL TIME : 15 + 15 (cooking + soaking Badas)

SERVES : 4


Ingredients

1 cup Chana dal

1 cup Urad dal

½ cup Matar dal

3 cups Plain curd

2-3 tsp cumin seeds (jeera 2 tsp for masala & 1 tsp in batter)

2 tsp Red Chillie Powder

½ tsp Black salt

Salt to taste

Pudina and Coriander leaves for garnish



Description

1. Soak chana, urad & matar dal overnight.

2. Wash them well and grind coarse with green chillies, hing, cumin seeds and garlic. Add little water if needed.

3. Keep a thick consistency of the batter as shown in picture.



4. Now add more jeera seeds, red chillie powder, salt to taste & soda (optional). Whisk well and keep aside for 5 min to set.

5. Heat oil and fry Badas slightly big in size. You can use a big spoon to drop the batter in hot oil or by hand.




6.(Optional) for making the Bada super soft, drop them in water directly after frying. After 30 seconds gently squeeze the water out of them by pressing between your palms.

Tip Add 2 tsp rice while soaking dals to make the Bada more crispy.

For Curd

1. Roast cumin seeds, coriander seeds and red chillie on low flame until fragrance comes.



2. Cool it down a little and grind into fine powder.

3. Whisk the curd and then dilute it by adding 1 cup water.

4. Add the roasted masala, salt, black salt, ½ tsp red chillie powder.

5. Soak the Badas for 10- 15 min and store in refrigerator.

6.Garnish with freshly chopped coriander leaves and pudina (or pudina powder). ENJOY!
